Ole Black Magic Chocolate Mug Cake by Jo Seagar

This is a cup of ole Black Magic – a great chocolate treat when you are on your own and need cheering up fast. It is like a sticky chocolate pudding with sauce in the bottom. Really, it is enough to for two to share.
30 g butter
1/3 cup dark chocolate chips or chopped dark chocolate
1 teaspoon Dutch cocoa
1 tablespoon brown sugar
½ teaspoon vanilla
Spray a microwave proof coffee mug or ramekin with non-stick baking spray.
Place the butter, chocolate chips and cocoa in the mug and microwave for 20 – 30 seconds to melt. Stir to mix smoothly together.
In a separate small bowl, whisk the egg, sugar and vanilla together. Pour this into the mug and mix until well combined.
Microwave on high for approximately one minute. The cake should rise to the surface leaving the molten chocolate underneath. Serve with a dusting of icing sugar and a dollop of whipped cream or vanilla ice cream.
