MermaidMary Cocktail: The French 75 

The French 75 or 75 Cocktail, or in French a Soixante Quinze is a drink that dates back to World War I, and an early form was created in 1915 at the New York Bar in Paris called ‘Harry’s’. It’s called a 75 as it’s deceptively potent. It looks like a light champagne cocktail but upon tasting it the alcohol kick is said to have originally felt like being shelled with the powerful French 75mm field gun.

The French 75

45mls gin
15mls fresh lemon juice
15 mls simple sugar syrup
60 mls dry sparkling wine, such as brut Champagne, chilled

Combine gin, lemon juice & sugar syrup in a shaker.
Fill shaker with ice, cover, and shake vigorously until outside of shaker is very cold.
Strain into a large champagne flute.
Top with chilled sparkling wine or Champagne.
Garnish with a lemon twist.
