Karla Goodwin is our Weekend Treat guest on The Long Lunch and here's her lemon shortbread recipe:
Roughly 40 Stars
60g Icing sugar
1/4 tsp. Salt
240g Cold butter, small diced
1 Lemons, zested
Sieve the flour, icing sugar and salt. Place into a food processor.
Add the butter, vanilla and lemon zest mix until combined. Wrap and chill for 30 minutes.
Roll out on baking paper using the purple size on rolling pin. Cut the stars and chill.
Bake at 130 deg for 12 minutes. Turn and another 10 minutes.
